I like QuickSilver. Its a fully loaded app, but I use it really to only open up files. I have my bind set to CMND + Space Bar, and it brings up a box where you can type the first few letters of the program you want, hit return/enter and it loads it. Very useful since you don't have to always look for programs or files.
Like dope was saying, the dashboard can get rough. I have a widget (I believe called Dash Quit) that will close the dashboard completely.
Another program called iAlertU is a little simple security program. If you are walking away from your laptop and desk, you "arm it" It has options to be set off from things such as mouse movement, key buttons hit, and even motion sensitivity. Furthermore, you can set it up to take a picture with your camera and have it e-mailed to you. ClamXav is an open source virus program. Not really needed when it comes to Macs, but its nice to have around. Toast is a good burning program Smultron is a good light program editor
I find that there are not enough effects that come with photobooth, and you should be able to find more at apple. I feel the same about iDVD themes if you are into making DVDs.jk
